1. Loaded Spaghetti
Just fry some peppers and onions in olive oil, boil some spaghetti and mix it all together with soybeans. It couldn’t be simpler, but it tastes lush! This meal is packed with veggie goodies and bean proteins for less fat. We recommend using brown spaghetti as it takes longer to release its energy, meaning you feel fuller for longer. Add different herbs and spices to change things up; a little bit of garlic or some chopped chilli should tickle your taste buds quite nicely.
2. Broccoli and Feta Omelette with Toast
Whip a couple of eggs, a pinch of dill and a handful of feta cheese in a bowl then place it to one side. Next, fry some broccoli in a pan for 2 or 3 minutes. Add the eggs and let it cook for a few more minutes before flipping. Once it’s cooked through, you’re ready to enjoy your yummy meal with some toasted rye bread. Easy peasy! This meal is great if you’re after some warming comfort food. If broccoli isn’t your thing, you can use spinach, kale, or courgettes instead. Who knew eating healthy could taste so good? And it serves as a best healthy breakfast!
3. Baja Butternut Squash Soup
Bake half a squash until soft, then fry some celery, onions and carrots in a saucepan. Next, add the squash, some cumin, chipotle chili, and cloves to the pan. Pour in the vegetable stock and simmer for 20 minutes before blending to a creamy texture. You can even add yoghurt and a sprinkling of chives if you’re feeling extra indulgent. This delicious soup is great for cold evenings or as a handy healthy lunch to take to work.
4. One Pot Lemon Herb Chicken and Rice
Season some chicken with salt and pepper then lightly fry it on both sides. Next, mix some rice, lemon juice, and chicken stock into the pan. Sprinkle on some Italian seasoning, add a lid, simmer for 20 minutes and hey presto! You’ve got yourself a meal. Serve with parsley and some lemon wedges. Once you’re confident, you can experiment with the flavours and herbs; we recommend orange juice as an alternative to lemon juice. Substitute the Italian herbs for some rosemary and basil. Two flavoursome meals with just one recipe. Coupled with healthy ab exercises, it could cut down some inches on that abdomen!
5. Ingredient Slow Cooker Hawaiin Meatballs
Add the turkey meatballs, pineapple (with juice), teriyaki sauce and tapioca to your slow cooker. Replace the lid and cook for 6 to 8 hours (low) or 3 to 4 hours (high). Add the green peppers and cook for a further 20 minutes on the high setting. Serve your masterpiece with brown rice. This one gets a gold star from us for easy preparation.
